Baked Chicken with Budimka Plum Spread

Ingredients

For 4 servings

4 chicken drumsticks and thighs (or chicken breasts)
2 tablespoons Budimka Plum Spread
2 tablespoons olive oil
1 tablespoon mustard
1 tablespoon soy sauce
1 garlic clove (finely chopped)
Salt and pepper to taste
Fresh rosemary or thyme (optional)

Preparation

In a bowl, combine Budimka Plum Spread, mustard, olive oil, soy sauce, garlic, salt and pepper.

Mix until smooth.

Add chicken pieces, coat them well and let marinate for at least 30 minutes (or longer in the fridge).

Place the chicken in a baking dish, brush with the remaining marinade and add a sprig of rosemary.

Bake at 200°C for about 40 minutes, until golden and juicy.
Optionally, baste once with the juices from the pan during baking.

Serve with roasted potatoes, sweet potato mash or a fresh salad.

For a stronger flavor, add a teaspoon of balsamic vinegar to the marinade — it pairs beautifully with Budimka Plum Spread.
